Instructions:
Preparation of Poha:
- Rinse the flattened rice under cold water. Drain and let it sit in a colander for about 10 minutes to allow it to soften. Be careful not to over-soak it, as it can become mushy.
Cooking the Potatoes:
- Heat oil in a large pan over medium heat. Add the diced potatoes and cook until they are golden brown and tender, about 8-10 minutes. Stir occasionally to ensure even cooking. Remove the potatoes from the pan and set them aside.
Tempering the Spices:
- In the same pan, add a little more oil if needed. Add mustard seeds and cumin seeds. When they start to splutter, add the chopped green chili and onions. Sauté until the onions turn translucent and soft.
